Baking Brilliant Banana Bread

I baked a great loaf of banana bread last week, playing hostess for a visiting friend and providing a good excuse to use my overripe bananas sitting on my kitchen bench. I added in some strawberry yoghurt I had in the fridge, instead of butter, and it turned out brilliantly! I wasn't too sure if I'd fluked it, or if I'd created something amazing, so I went for a second attempt on Saturday afternoon.

If you'd like to make some for yourself, here's what you'll need: 

1 teaspoon of cinnamon
1 2/3 cups Self Raising Flour
1/3 Plain Flour
1/2 cup Brown Sugar
1/2 cup of strawberry yoghurt
2 eggs
2 bananas

Mix your dry ingredients together, then add in your eggs, mashed bananas and yoghurt. If you think it's a little sticky looking, you can add in a splash of milk too. Bake in a loaf pan at 180 degrees for around 40 minutes, or until it's cooked in the centre! Easy peasy!

The yoghurt keeps the bread nice and moist and adds a subtle strawberry kick. We recommend serving with a chocolate hazelnut spread for the perfect snack. Delicious! If you try out the recipe or have other fun additions for future banana bread baking days, I'd love to hear them in the comments.
